To Joe and Jill –- just like everybody else here, Michelle and I thank God you are in our lives. Taking this ride with you is one of the great pleasures of our lives. Joe, you are my brother. And I’m grateful every day that you’ve got such a big heart, and a big soul, and those broad shoulders. I couldn’t admire you more.

Oh I did last night. I made an ass-load o' black beans in my new dutch oven.
I will say this, Scoop: symphonic. One of them had three movements.

I trust, Herr Mondo, you have a true cast-iron Dutch Oven, and not one of those ersatz aluminum ones? And is it a kitchen one (domed lid) or a camp one (lid with a rim)?

No, actually I didn't get a cast iron one. As much as I wanted one, Target didn't have one. It is Caliphon 5 quart model. Nice and heavy, tight fitting lid. Excellent heat distribution.
I will be attempting pot roast or stew next Sunday.

I think my onion to carrot and celery ratio was off in my mirepoix though. But not bad for first effort when I was going solely on what I remember from "Good Eats" on doing beans.

Calphalon is good- the hard anodized aluminum is quite different from the other stuff. Besides, Julia used that in her later years.
