Good Sunday morning everyone. Its spring and that means our gardens will soon be full and brimming with lots of delicious things to cook. So, lets get started shall we? Our Entrée today will be:

Braised beet stuffed Trout with Chardonnay and Lemon Sauce

In a greased casserole dish add the Trout along with one chopped onion and 1/2 cup of lemon juice. Braise the beets with butter and garlic and add the slices onto the trout fillet. Put a second fillet on top, fill the casserole dish 3/4 with Chardonnay and the rest with heavy cream. Cook with top on, at 475 degree’s for 35 minutes.
Serve with a sprig of parsley and a cinnamon stick.

Speaking of beets, wasn’t that Chris Dodd somewhat red-faced when he had to admit that he’d been pressured into okaying language by the treasury Department regarding the AIG bonus’. Here’s what I don’t understand, somehow contractual obligations become really, really important when it affects AIG executives, but not so much when it affects Autoworkers or Government employees (remember when Reagan fired the Air Traffic Controllers) or even our soldiers (Stop Gap). Anyone know why that is? Why shouldn’t AIG fail just like the little ‘Mom and Pop’ store down the street that couldn’t understand why people didn’t want to buy their shoes made of old CD cases? Hmmm?

Anyway, our side dish to go with our Entrée will be:

Cold Potato cream pie wrapped in baked Kale, sautéed in Brandy

Slice potato’s (white or Yukon golds) into large chunks and marinated for 2 hours in tomato paste and blueberry juice. Fry potatoes in a skillet with one onion and 2 cloves of garlic. Sprinkle in Brandy to taste. When they turn a lovely brown, add the slices to your Kale leaves which have been soaking for one day in Tamari Sauce. Roll the leaves and secure with a toothpick, drizzle the leftover tomato paste and blueberry juice and then add a bit more brandy around the edges.

You know, speaking of chunks, I was angry when the White House had Larry Summers up to argue that America is “a nation of laws……”, saying that these AIG contracts applied. To help him in this argument was Edward Liddy, formerly of Allstate Corp. Rebecca Mowbray reported last week in the (Louisiana) Times Picayune in an article “Contract Sanctity at AIG, but not Allstate?


Liddy ran Allstate Corp. from when it was spun off from Sears, Roebuck & Co. in 1995 until the end of 2006. During that time, Allstate perfected the practice of getting tough with policyholders to delay and deny claims, as documented in the book by New Mexico attorney David Berardinelli, From Good Hands to Boxing Gloves: the Dark Side of Insurance.

While that book dealt mainly with a strategy for tamping down car insurance claim payouts to increase profitability, many believe those same practices could be seen at work en masse after Hurricane Katrina in Louisiana, where thousands of policyholders filed suit against the Illinois company…

Evidence emerged after Hurricane Katrina that Allstate shifted the burden of paying for wind damage covered by its homeowners policies onto taxpayers by overcharging the federal flood program.


This would be hilarious were it not for people suffering so much!

Anyway,

Our vegetable will be….. a salad. Throw some greens in a bowl, slice a tomato, onion, and carrots if you which. Top with Rosenborg Blue cheese.

And ya know, while we are all angry over the executive bonus packages that these people are getting, we are missing the bigger picture. What led to all this and are we doing anything to stop it?

I feel a headache coming on. Let’s finish our meal.

Dessert was to be Chocolate ice cream and Cointreau Crepe surrounded by fruit and set ablaze …. but, just throw some ice cream in a bowl; same bowl as the salad. It’ll save dishes. Now down the Cointreau with each bite. Or, better yet, open the Scotch.
