Yeah the original red velvet recipe originally used little to no food coloring - the reaction of vinegar and buttermilk with cocoa brought out the red color. That changed with the rise of dutch-process cocoa tho.

Actually its other more known name is Ermine frosting.. the butter roux is just part of the finished product.
